RV Campground Cooking

KOA campgrounds! Her new cookbook, "Campground Cooking",
is a collection of more than 200 fun, easy recipes designed for
RV cooking. Pat says all of the recipes can be made using an
RV oven, crock-pot, microwave or electric skillet. She even has
sections on cooking with foil and recipes for grilling. Many of
the recipes can be adapted for cooking over an open fire, and
it's great for busy cooks at home.... PORCUPINE MEATBALLS
1 1/2 lb. ground beef
1/2 cup uncooked instant rice
1/4 tsp pepper
1/2 tsp seasoned salt
1/4 tsp garlic powder
1/4 cup finely chopped onion
2 tsp vegetable oil
1 cup water
1 (15 oz) can tomato sauce
Mix together ground beef, rice, onion, & seasonings. Form into
balls, about 1 inch in diameter. Brown meatballs in oil in a hot
skillet. Add tomato sauce and water. Cover skillet and simmer
on low heat for about 45 minutes or until rice is tender. Add
additional water during cooking time if sauce becomes too thick;
or if sauce is too thin, uncover and simmer 5-10 minutes more to
thicken.
TIP: If cooking over an open fire, cover loosely with foil and
cook on a low fire stirring often. If desired, spaghetti can be
cooked ahead of time; rinsed with cold water; and drained well--
store in a plastic storage bag. Spaghetti can then be put in a
pan of hot water over the fire for a few minutes to reheat.
